Fabulous Margaritaville Dessert: Imbibe’s Recipe for Blackberry-Tequila Sorbet

As soon as I am on vacation, I am trying this recipe from the July/August issue of Imbibe Magazine:

Blackberry-Tequila Sorbet

  • 2 cups water
  • 1 cup sugar
  • 4 cups blackberries, fresh or frozen
  • 2/3 cups freshly squeezed lime juice
  • 6 TBSP triple sec
  • 6 TBSP tequila blanco
  • 1 tsp. grated lime peel

Stir water and sugar in heavy medium saucepan over medium heat until sugar dissolves.  Increase heat and bring to a boil.  Remove from heat, pour into medium bowl, and set aside to cool.

Using a blender or food processor, puree the blackberries with water and sugar.  Press the mixture through a strainer to remove seeds, then stir in the lime juice, triple sec, tequila and lime peel.  Refrigerate until cold, about 2 hours.

Transfer sorbet mixture to ice cream maker and process according to manufacturer’s instructions.  Transfer sorbet to container; cover and freeze until firm, at least 3 hours.

Scoop and serve in chilled margarita glasses, garnish with a fresh blackberry.

Makes about 1 quart.
